Making time to prepare a meal from scratch during the week is a lost art for many of us. How many families these days actually sit down to a home cooked meal together nightly? In all seriousness, I am lucky if am able to cook half of my work week days. It’s something we ALL can benefit from-not only for our health and wallets, but our communication skills as well. Research has shown that children from families that dine together score higher in the classroom, have better vocabulary and reading skills, and are more likely to be emotionally content. As technology has become a welcome guest at many tables, the focus on human connection has decreased. Play the ‘phone stack’ game at your next meal-all patrons place their cell phones in a stack on the table and no one picks up his phone until the end of the meal.
In an effort to prepare more food from scratch myself, I have been recently obsessing over the SKINNYTASTE cookbook. There are numerous recipes that I have liked and will revisit, but I LOVED LOVED LOVED the spicy black bean burger with chipotle mayo. I can’t wait to make it again, only double the amount to freeze some for later. Bursting with flavor and perfectly spicy, I can’t think of a black bean burger I’ve ordered anywhere I would praise so highly. Some friends have asked me for the recipe, and you can find it here:
